Day's Inspiration, Joke, Recipe

The reason I try hard to include a day's recipe, joke and inspiration is because we are all human. We all eat. We all laugh. And we all need inspiration. When you are sick, you need to remember to eat food good for your body, laugh and be inspired. And I am trying to do just that. A little. And maybe as you keep reading these posts, you will think a little more during the day, about better food you can eat, ways to laugh, and things that inspire not only you but others as well.

Right now, my personal daily inspiration comes from Rick Godwin, pictured above with his wife, and I am listening to the courage series. He is humerous and on point. And free on the Internet. So are many others, so keep looking if you need inspiration...Joel Osteen, etc. We all need courage to get through life. Sick, we need more courage. Sick, with no real doctor helping us, and our bodies faltering all the more, WOW, do we need courage. Been there, done that.

Day's Recipe:

Strawberry Preserves

  • four cups strawberries, stemmed, trimmed, and cut up.

  • two cups sugar

  • 1/4 cup fresh lemon juice

Let sit and macerate for 8 hours. Bring to boil on stove. Simmer for 20 minutes. If you have a whole lot of energy, process canning jars and lids, and can all this stuff. LOL, do you think I really do this? Heck, no. I just dump in a large enough jar and keep in the fridge. And use as needed. Yes, it is sugar. But NO, it is not high fructose corn syrup.

Inspiration: "We assume that happy and unhappy people are born that way. But both kinds of people do things that create and reinforce their moods. happy People let themselves be happy. Unhappy people continue doing things that upset them." David Niven, PH.D. from The 100 Simple Secrets of Happy People, page 3

Joke: Man shows up at a woman's house to buy a Porshe for $50. He is the only one who shows up, no one else believed the ad. The man asks the woman why she is selling the car for fifty dollars. She says, 'that car was my husband's car. He ran off with another woman, and didn't even have the courage to tell me to my face. He just sent me a letter saying I could keep everything, just sell the car and send him the money. !!!
